Thyme is a hardy herb that is easy to find year round, so it counts as in season all year.

At the shop

Choose perky sprigs and leave any with soggy stalks or blackened leaves.

Keeping it

Thyme is a hard herb. Wrap it in a damp paper towel, seal it in a zip-lock bag and keep it in the fridge crisper, where it lasts about two weeks or longer. To keep it longer, chop it, pack it into an ice-cube tray, cover with olive oil and freeze for up to six months.

  • Roast chicken with thyme and lemon Stuff the cavity with sprigs.
