Green beans is in season in Australia from November to April, and at its peak from January to March. This is the cooler south; the tropical north has its own calendar.

At its best

Late spring through to autumn, with the best of it from January to March. Brisbane Markets named green beans its pick of the week in January, with supply coming from the Lockyer Valley, Stanthorpe and Bowen.

At the shop

Look for firm, straight beans with a solid, even colour.

Keeping it

Keep them unwashed in the fridge crisper, in a perforated or open plastic bag with a paper towel to soak up moisture. They stay good for about a week. Green beans are sensitive to ethylene, the gas given off by ripening fruit, so keep them away from ripe mangoes, figs and the like.
