Baby spinach in season in Australia

Baby spinach is in season in Australia from all year, and at its peak from August to November. This is the cooler south; the tropical north has its own calendar.

At its best

Spinach turns up in Sydney Markets' lists for every season, so it is on the shelf all year. Late winter to spring is its best stretch.

At the shop

Check the use-by date on the bag and pass over leaves that look wet or slimy. Many bags are pre-washed, and the pack will say so.

Keeping it

Keep the leaves dry in their original packaging in the fridge, which should be 5 degrees or colder. Skip airtight or vacuum-sealed tubs, as leafy greens like humid but not wet air. Eat pre-packed leaves before the use-by date, and do not rewash ones sold pre-washed.

Three dinners

  • Spinach and ricotta pasta bake Wilt the leaves first and squeeze out the water.
  • Egg fried rice with spinach Stir the leaves in off the heat so they just collapse.
  • Warm lentil salad Cooked lentils, a sharp dressing and a handful of leaves.
