Sugar snap peas in season in Australia
Sugar snap peas is in season in Australia from June to March, and at its peak from September to December. This is the cooler south; the tropical north has its own calendar.
At its best
Sugar snaps are at their best in spring. A Melbourne wholesaler says most of the winter supply is imported from China, so the local crop is the one to wait for.
At the shop
Snap a pod open in the shop if you can. A crisp snap means it is fresh.
Keeping it
Keep them unwashed in the fridge and use them within a few days, as with other fresh peas. Rinse them just before eating.
Three dinners
- Sugar snap and ham pasta Toss the raw pods in at the end.
- Sugar snap and mint salad Raw, with feta and lemon.
- Chicken stir-fry with sugar snaps Add them near the end to keep them crisp.
